Heating Deep Fill Pub Pies

Deep Fill Pub Pies must be reheated from a defrosted state.

Conventional oven reheating is great but is likely to take around 25 to 30 minutes…. far too long for normal service requirements.

So… the best way to reheat the pie is as follows, it works really well.

From defrost, snip the foil from top to bottom in 4 places like the image suggests. Place the pie in the snipped foil, in a microwave on a suitable plate, the foil is microwavable.

 

 

 

 

 

 

 

 

I have a 1750w machine, so I gave it 90 seconds on full power, which took the centre temperature to about 50 °C. Then, I placed the pie still in the foil, in the oven on 180°C for a further 10 minutes. This “crisped up” the pastry beautifully.

So you can get a pie out to the customer inside 15 minutes.

If you don’t cut the foil the microwaves tend to bounce off the foil and you’ll be there for ever… this way, the heat gets into the pie…it works really well, plus…. the pie slightly slumps giving the product a nice homely “cottage loaf” appearance.

HEATING INSTRUCTIONS

1. For best results, prior to re-heating defrost product and keep chilled at 1-5°c (can be stored in fridge for up to 7 days from defrost).

 

2. Pre heat convection oven to 170°c.

 

3. Keeping pie in its CPET tub, reheat in microwave on full power for 2 mins.

 

4. Remove pie from CPET tub and place on a baking tray in a preheated oven for 5 minutes.

 

5. Ensure that product reaches a core temperature of 72°c.(Piping hot)

6. Serve immediately after reheating.

Roast Mediterranean Vegetable, Butter Bean & Rosemary Pie  VEGAN

INGREDIENTS

Filling: Roasted vegetables (courgettes, red & yellow peppers, red onion & aubergine) 29% butterbeans 5%, modified maize starch, chopped tomatoes, vegetable stock (water, onion, carrot extract, tomato, herbs, garlic spice) salt, glucose syrup, maltodextrin, yeast extract, sugar, flavourings, rapeseed oil. Thyme, tomato puree, garlic, paprika, chilli flakes, salt, pepper, black olives, smoked paprika, rosemary,Guar gum, Potato starch.

Pastry:

 

Rice flour, tapioca flour, chickpea flour, potato flour, margarine (palm oil,

rape oil, water, emulsifier E471, annato, curcumin, natural flavouring, xanthan gum

HEATING INSTRUCTIONS

1. For best results, prior to re-heating defrost product and keep chilled at 1-5°c (can be stored in fridge for up to 7 days from defrost).

 

2. Pre heat convection oven to 170°c.

 

3. Keeping pie in its CPET tub, reheat in microwave on full power for 2 mins.

 

4. Remove pie from CPET tub and place on a baking tray in a preheated oven for 5 minutes.

 

5. Ensure that product reaches a core temperature of 72°c.(Piping hot)

 

6. Serve immediately after reheating.

Steak & Kidney Pudding

INGREDIENTS

Filling:


Beef 25%, Calves Kidney 17%, Carrot 7%, Onion, Tomato Puree, Garlic, Spice,Herb, Malt Extract, Modified Maize Starch, Salt, Beef Stock Base( water, beef extract, onion, tomato, carrot extract, herbs, spice, garlic, salt, glucose syrup, flavourings, maltodextrin, yeast extracts, rapeseed oil, colour (caramel), sugar)hendersons relish (water, spirit vinegar, sugar, colour (caramel), syrup, salt,Tamarinds, Acetic Acid, Cayenne Pepper, Cloves, Sweetener – Saccharin, Garlic Oil,Emulsifier – Tragacanth and Isopropyl Alcohol).

Pastry:

Rice flour, potato flour, oat flour, brown rice flour, tapioca flour, beef suet, pork fat(lard), xanthan gum, psyllium husk powder, rosemary, salt.

5. Alternatively, for a ‘steamed pudding effect’ you can wrap the pudding in its CPET tub tightly in clingfilm and microwave for 3 mins.

 

6. Ensure that product reaches a core temperature of 72°c.(Piping hot) 7.
